Show us your life - Christmas Cookies and Treats

Kelly is hosting a Show Us Your Life party (click HERE for the link), so I thought I would join in! I have two recipes to share. The first is for toffee chocolate squares that are now a tradition in our home during the holidays. The second - rocky road candy - was a Christmas party and sweets tray standby for my mom.

Toffee Chocolate Squares

Graham crackers
1 cup dark brown sugar
1 cup butter
1 (11 3/4 oz) package milk chocolate chips
1 cup ground pecans or chopped nuts

Line a pan (at least 10x15 inches in size) with foil on bottom and sides. Line this with separated rectangular graham crackers (NOT crumbs) placed side by side. Simmer together the butter and sugar for 3 minutes, or until sugar is mostly dissolved. Pour mixture quickly over crackers and bake in a preheated 400 degree oven for 5 minutes. Remove from oven. Sprinkle chocolate chips over all, spreading to cover as they melt. Sprinkle pecans over top. Cool and cut into squares. Makes about 75 squares.

Note: these are pretty rich, so you break them into pretty small pieces.

Rocky Road Candy

1 12 oz package, semi-sweet chocolate chips
1 14oz can, sweetened condensed milk (can use fat free, if you want)
2 TBS butter
2 cups dry, roated peanuts
1 10.5 oz miniature marshmallows

Over low heat, melt chocolate with milk and butter. In large bowl, combine nuts and marshmellows. Stir in chocolate mixture. Spread in a wax-paper lined 9x13 pan. Chill two hours or until firm. Peel off wax paper and cut into squares.

  2. Thank you for the toffee recipe! I went with my Dad to a work function, and had these. He asked for the recipe, but we lost it... Thank you for letting me find it!!
